1/4 cup butter, softened
3/4 cup sugar
1 3/4 cup Nitty Gritty Pancake & Muffin Mix
1/2 cup milk
1 15 oz can pumpkin pie mix
1/4 tsp ginger
1/4 tsp nutmeg
1/2 TBSP cinnamon
Crumb Topping (Recipe follows)
Heat over to 350 degrees. Lightly grease 10 inch glass pie plate or baking dish, dust 1 TBSP flour on top of this and set aside.
In medium bowl with mixer on medium speed beat butter, sugar, and egg until light and fluffy. Reduce mixer to low and blend in Pancake Muffin Mix and milk. Add pumpkin and spices and mix until well blended.
Pour into baking dish. Scatter with crumb topping. Bake for about 45 minutes.
Crumb topping: Combine 1/4 cup sugar, 1/4 tsp salt, 1/2 cup flour, 1/2 tsp cinnamon and 1/4 tsp nutmeg. Using your fingers or a food processor, cut in 2 TBSP butter until topping resembles coarse sand.
