|1/4 cup (1/2 stick) butter, softened |
3/4 cup sugar
1 3/4 cups Nitty Gritty Cornbread Pancake &
1/2 cup milk
1-15 oz. can organic pumpkin puree
1/4 tsp. fresh or ground ginger
1/4 tsp. nutmeg
1/2 tsp. cinnamon
Crumb Topping (recipe follows)
Heat oven to 350 F. Lightly grease a 10-inch glass pie plate or baking dish. Set aside. In a medium bowl, with mixer at medium speed, beat the butter, sugar, and egg until light and fluffy. Reduce mixer to low and blend in Cornbread Mix and milk. Fold in pumpkin, ginger, nutmeg, and cinnamon. Pour into baking dish. Scatter Crumb Topping over the top. Bake about 45 minutes or until a toothpick inserted in the center comes out clean.
Combine 1/4 cup sugar, 3 TBS. Nitty Gritty Grain's Soft White Wheat Pastry Flour, 1/4 tsp. salt, and a dash of cinnamon and nutmeg if desired. Using your fingertips, or in a food processor, rub or cut in 2 TBS. butter until topping resembles coarse sand.
